The Climate Kitchen (generously funded by the Food Systems Research Institute) is collaborating once again with the superstar team at UVM Dining to offer a circular (meaning waste is designed out!) lunch buffet at Waterman Manor on Tuesday, November 4 and Wednesday November 5, 2025

The lunch menu will feature delicious dishes that were developed with circularity in mind, including dishes made from local surplus produce, utilizing byproduct (e.g., carrot and potato skins), and upcycled ingredients (think day-old bread used in a panzanella salad)! We hope that this will be a fun and hands-on way for faculty, staff, and students to engage with the Climate Kitchen sustainability tenets, inspired by the principles of a circular economy for food - and maybe even inspire people to join us in reimagining the future of food!

There will be two one-hour seatings at 11:30 and 12:30, respectively, and it is recommended that you make a reservation (802-656-4664). Price: $23.99 for all you care to eat.
